摘要： 采摘后的双孢蘑菇面临失水、氧化、微生物侵染等危害，本实验利用双孢蘑菇下脚料多糖，发现其在双孢蘑菇上具有较好抗氧化性，在抑制失重率，开伞率，酶活上效果明显。确定最佳使用浓度为0.6%。基于多糖作为包衣子材料进行复配比较实验，比较了佛手柑精油，肉豆蔻精油，茶树精油，月桂精油，茴香精油。发现5种精油在抑制霉菌和酵母较好（月桂精油>肉豆蔻精油>茴香精油>茶树精油>佛手柑精油），但在抑制铜绿假单胞菌上没有效果。综合多糖和精油复配具有抗氧化和抑菌作用，但是由于复配涂膜液本身颜色问题，对双孢蘑菇保藏初始颜色具有一定影响。综合考虑，在4℃条件下，以多糖为包衣材料复配精油可以延长双孢蘑菇货架期至16天。

Application of Compound Preservative in Preservation of Button mushroom
Abstract: After picking, the Button mushroom is faced with damages such as water loss, oxidation, and microbial infestation. In this experiment, the Polysaccharides of Button mushroom were found to have good anti-oxidation properties on the Button mushroom, and the rate of weight loss was suppressed. , The enzyme activity is obvious. Determine the optimal use concentration of 0.6%. Based on the comparison experiment of polysaccharides as a coating material, bergamot essential oil, nutmeg essential oil, tea tree essential oil, laurel essential oil and fennel essential oil were compared. It was found that the five essential oils are better in inhibiting mold and yeast (laurel oil> nutmeg oil> fennel oil> tea tree oil> bergamot oil) but have no effect on inhibiting Pseudomonas aeruginosa. The combination of polysaccharides and essential oils has anti-oxidation and antibacterial effects, but due to the problem of the color of the compound coating liquid itself, it has certain influence on the preservation of the initial color of Button mushroom. Considering comprehensively, at 4°C, using polysaccharides as the coating material to mix essential oils can extend the shelf life of Button mushroom to 16 days.
