摘要:本试验以扬麦1号、扬麦158和扬麦16为试验材料,采用大田人工模拟遮阴方式,研究了不同遮阴处理对小麦籽粒千粒重、形态、淀粉品质和蛋白品质的影响。结果表明,拔节至开花遮阴增加了籽粒宽度和千粒重,提高淀粉含量、支链淀粉含量和面粉粘度,降低蛋白及其组分含量,GMP含量、干湿面筋含量、面筋指数和沉降值,且遮阴强度越大,淀粉品质的提高幅度及蛋白品质的降低幅度越大。开花至成熟遮阴与拔节至成熟遮阴降低了淀粉含量和面粉粘度,提高了各蛋白组分含量、面粉糊化温度、GMP含量、面筋质量和沉降值,且开花至成熟遮阴对品质的影响幅度大于拔节至成熟遮阴。

Effects of shading during different periods on the quality of wheat grain
Abstract: Artificial shading experiment in field was conducted using three Wheat cultivars, Yangmai 1、Yangmai 16 and Yangmai158, to explore the effects of shading on 1000-grain weight、form、starch quality and protein quality of wheat. The results showed that shading from jointing stage to anthesis increased the width of grain, increased 1000-grain weight、starch content、amylopectin content and flour viscosity, reduced protein and its constituent content、GMP content、sedimentation value、dry gluten content、wet gluten content and gluten index. The greater the shading intensity, the greater the increase on starch quality and the decrease on protein quality. Anthesis to mature period and jointing stage to mature period both reduced starch content and flour viscosity, increased each protein content、gelatinization point、GMP content、gluten quality and gluten index. And the effects on quality from anthesis to mature period were inferior jointing stage to maturity.
